Low Calorie Healthier Cheesecake

If we are being honest, cheesecake is my weakness (and cheesecake factory is my heaven). So I wanted to create a healthier version by with low sugar, low fat, but all the taste for Valentine's day (cheesecake might also by bae's guilty pleasure!)


Try this recipe below for a healthier take on a favorite!

Ingredients:

FILLING:

Two 8oz packages of Neufchatel Cheese (1/3 less fat cream cheese)

1/2 cup white sugar (or sugar substitute)

2/3 cup of plain greek yogurt

1 tsp vanilla extract

4 eggs

2 tsp cornstarch


CRUST:

2 packages of crushed graham crackers

1 stick melted butter

1/2 cup melted coconut oil


INSTRUCTIONS:


Looking for cheesecake with half the sugar and fat? Try this delicious low calorie cheesecake recipe!

Preheat oven to 300F. Combine crust ingredients and press into a 10" spring form pan. Bake for 10 minutes or until golden. In the mean time, combine sugar, Neufchatel cheese, and greek yogurt until smooth. Add cornstarch, vanilla extract, and eggs and mix until combined. Pour onto cooled crust and bake for 1 hour and 20 minutes (or until cheesecake it slightly jiggly in the center. Baking completely til stiff throughout can cause cracks. Cornstarch prevents this.)


Feel free to add chocolate, nutella, berries, caramel, nuts, or anything else to customize your cheesecake!
